Fruit pizza - a summertime treat
This is a dessert that allows kids to have fun in decorating.

If you know me, you know that I do not like to cook. My husband cooks. But this great dessert (we made together this weekend) is too wonderful not to share:
Fruit Pizza - Ingredients
1 box yellow cake mix
¼ cup water
¼ cup margarine
2 eggs
¼ cup brown sugar
½ cup pecans, finely chopped
8 ounces cream cheese at room temp
1 pint whipped cream
Sliced strawberries, blueberries, bananas, chunked pineapple sliced in half, sliced kiwi fruit
1 small jar apricot preserves
1 ½ tablespoons water
Combine cake mix, water, margarine, eggs, brown sugar, and pecans. Press into 2 pizza pans which have been greased and floured. Bake at 375 degrees F. until brown.
Whip cream cheese and fold into whipped cream. This takes a while. Spread over cake crust.
Drain fruit several hours before using. Soak bananas in pineapple juice and drain. Arrange fruit on crust in pie wedge design or in rows.
Combine apricot preserves with water. Glaze fruit.
This beautiful dessert will look like a stained glass window.
